Job Summary:
The primary responsibility of the Culinarian #3 is to prepare lunch and supper entrees, vegetables, soup and other items as ordered, mobile meals, cafeteria patrons and special functions.
Hours: Full-Time; morning and afternoon
Location: Hickory Grove Kitchen
Primary Job Responsibilities:
Prepare meal items as ordered or directed that are safe, nutritious, appropriate temperature, and according to therapeutic diet guidelines.
Keeps work area and equipment clean and sanitary in compliance with policy and regulations.
Cleans and puts away dishes and utensils.
Does assigned cleaning in a timely manner.
Utilizes left-overs in a safe manner and attractively served.
Assists with Planning and preparation of food for special events.
Compiles statistics from production sheets and daily counts.
Completes temperature checks and records on daily log sheets.
Portion food according to diet order, and menu on the tray line.
Plans and prepares food appropriate to age, cultural background, religious belief, and diet order of patients and residents.
Transports and sets up hot food for Buffets.
Receives, rotates and stores frozen foods in designated areas.
Weekends – set up for service of meals, reviews expiration dates on milk and yogurt and dispose of expired products, prepares hot beverages for service, turns on equipment, sets up designated items for service including dry and refrigerated breakfast foods.
Maintain competency for the operation of all unit equipment.
Checks meat inventory daily to ensure the availability of meat items and removal from freezer to allow for safe thawing.
